If all goes well with their final inspection, Rare Bird Brewpub will open their doors to the public next week. Co-owner and brewer Tina Schuett shares, “It’s been a long road. We’ve worked really hard to make sure everything’s just right and are excited to open the doors to let everyone see what we’ve built.”
On opening day they’ll have four of their own beers on draft: Pants Party American Pale Ale, Whip-Pour-Will Wit, Large Marge Belgian Special and Schadenfreude Chocolate Milk Stout. Tina says, “I think I’m most excited about the Pants Party Pale. If you want a heavily hopped IPA, this probably isn’t it. If you’re looking for a true, American-style pale that’s not too hoppy and made with local Biermacher Farms and Michigan Hop Alliance hops, you’ll love it. At 5.5% ABV, it’s definitely a session beer. We’ll have some big beers too of course, but I’m a small person, and I want to be able to drink more than one of my beers and drive.”
Rare Bird is a taproom, and that means they’ll be filling out their other 31 taps with beers from around Michigan including Short’s, Bells and Founders, for the U.S. at large with noted breweries like Oskar Blues, Rogue Brewery and Green Flash, and from around the world such as Weihenstephaner lager. Co-owner Nate Crane explains “Our beers will be rotating daily. While we are big fans of Michigan beer and will have some on tap, we won’t be exclusively focusing on Michigan beer. There’s so many cool breweries all over the country and world, and we’ll have an awesome representation of them available.”
“Traverse City has a lot of cool places to go, and we’re going to really work to stand out,” Nate adds. “In addition to our beers, we will have local wine and classic mixed drinks. I’m really excited to be able to offer some interesting cocktails made with our own beers and beverages. Tina will be making a non-alcoholic ginger beer in-house, and we will be able to make barrel-aged Moscow Mules and have plans for lots of other cocktails you won’t be able to get anywhere else!”
Their menu features fusion-style cooking from Brad Phillips with a nice array of food-friendly items including Pecorino Garlic Dusted Frites, Kimchi Dry Rubbed Chicken Wings, Tres Quesos Potstickers and Ceviche Marinated Grilled Mahi Mahi Tacos. As a nod to Tina’s Wisconsin heritage, they’ll have Pants Party Ale battered Flash Fried Cheese Curds too!
